Roasted Habanero Chicken

Description

Chicken breast marinated in a spicy, vinegary habanero sauce and baked to perfection

Ingredients

  • Habanero: 5, cut in half

  • Olive oil: 1/2 cup
  • White vinegar: 1/4 cup
  • Garlic: 6 cloves
  • Salt: 2 tsp
  • Cilantro: 1 tbsp
  • Lime juice: 1 tbsp

  • Chicken breast: 1-2 lbs

Notes

  • This is extremely spicy. Tone it down by removing habaneros and ditching the seeds/ribs from the habaneros
  • I generally cut the chicken breasts in half to make them thinner (this recipe works perfectly with two halved chicken breasts)

Instructions

  1. Roast habaneros on baking sheet at 400F until soft (~15 min)
  2. Combine habanero, olive oil, vinegar, garlic, salt, cilantro, and lime juice in food processor and puree
  3. Pour over chicken and let marinate in the refrigerator for 2h+
  4. Bake chicken (with marinade) at 400F until done (~35-40 min)
