Ingredients
- Flour: 1 lb (all purpose)
- Eggs: 4
- Egg yolks: 1
- Olive oil: 1/4 cup
- Kosher salt: to taste
- Water: 1 - 3 tablespoons
Notes
- I haven't tried this in a Kitchenaid, but I imagine it would work fine
- I used about 1 tsp Morton kosher salt
Instructions
- Put the flour in a large bowl. Make a well in the flour and add all other ingredients. Using a fork, beat the eggs together with the olive oil, water, and salt. Begin to incorporate the flour into this well
- Make the mixture homogenous by carefully continuing to mix in the flour, then begin kneading. Knead for about 10 - 15 minutes, until the dough is very smooth and almost velvety. Add more water as needed
- Wrap the dough in plastic wrap and let rest for at least one hour; if you plan to let it rest for more than this, put it in the refrigerator
- Roll and cut the pasta as desired
