Ingredients
- Eggs: 4 large, room temperature
- Flour: 2.5 cups (00 is better)
- Olive oil: 1 tbsp
- Salt: 1 tsp
Notes
- I want to try adding extra egg yolks instead of all whole eggs at some point
- Can also do the entire thing in the stand mixer instead - just use the dough hook and the stand mixer will do the kneading (8-10 minutes on low)
Instructions
- Add all ingredients to bowl of a food processor and pulse for about 10 seconds, until crumbly texture
- Remove dough and form it into a ball, then place on lightly floured cutting board. Knead for 1-2 minutes until smooth and elastic (add extra water or flour as needed)
- Form into a ball and wrap tightly in plastic wrap. Let rest at room temperature for 30 minutes, then use immediately or refrigerate for up to 1 day
- Roll out according to instructions on your pasta roller
