Ingredients
- Olive oil: 2 tsp (can substitute vegetable oil)
- Chicken breast: 1.5 lbs, boneless and skinless, cut into small, 1/2 inch cubes
- Salt: to taste
- Pepper: to taste
- Honey: 3 tbsp
- Soy sauce: 3 tbsp
- Garlic: 3 cloves, minced
- Red pepper flakes: 1/4 tsp
Notes
- Serve with rice and a vegetable such as roasted asparagus or spinach with garlic
- Top with sesame seeds and/or thinly sliced scallion greens
- Be careful not to overcook the chicken - it cooks through pretty quickly
- Sub soy sauce with tamari to make GF
Instructions
- Heat olive oil in a large skillet over medium-high heat
- Season the chicken with salt and pepper, then add to the skillet and brown on one side, about 3 - 4 minutes (don't touch it during this time to let it get a nice brown color)
- Make the glaze while the chicken is cooking - whisk together the honey, soy sauce, garlic, and red pepper flakes in a small bowl until well combined
- Add the sauce to the pan and toss to coat the chicken. Cook until chicken is cooked through, about 4 - 5 more minutes
- Serve with rice and a vegetable; top with scallions and sesame seeds if desired
