Honey Garlic Chicken

Sweet and savory chicken dish that's extremely easy and fast

Ingredients

  • Olive oil: 2 tsp (can substitute vegetable oil)

  • Chicken breast: 1.5 lbs, boneless and skinless, cut into small, 1/2 inch cubes
  • Salt: to taste
  • Pepper: to taste

  • Honey: 3 tbsp
  • Soy sauce: 3 tbsp
  • Garlic: 3 cloves, minced
  • Red pepper flakes: 1/4 tsp

Notes

  • Serve with rice and a vegetable such as roasted asparagus or spinach with garlic
  • Top with sesame seeds and/or thinly sliced scallion greens
  • Be careful not to overcook the chicken - it cooks through pretty quickly
  • Sub soy sauce with tamari to make GF

Instructions

  1. Heat olive oil in a large skillet over medium-high heat
  2. Season the chicken with salt and pepper, then add to the skillet and brown on one side, about 3 - 4 minutes (don't touch it during this time to let it get a nice brown color)
  3. Make the glaze while the chicken is cooking - whisk together the honey, soy sauce, garlic, and red pepper flakes in a small bowl until well combined
  4. Add the sauce to the pan and toss to coat the chicken. Cook until chicken is cooked through, about 4 - 5 more minutes
  5. Serve with rice and a vegetable; top with scallions and sesame seeds if desired
