Description

Sichuan-style spice mixture for coating meats and veggies

Ingredients

  • Sichuan peppercorns (red): 1 tbsp

  • Cumin seed: 1/4 cup

  • Dried Sichuan chili flakes: 2 tbsp
  • Black peppercorn: 2 tbsp, whole

  • Ground ginger powder: 1 tbsp
  • Garlic powder: 1 tbsp
  • Chili powder: 1/2 tbsp
  • Sea salt: 1/2 tbsp

Notes

  • This amount of cumin was a bit overwhelming - perhaps decrease

Instructions

  1. Toast Sichuan peppercorns until fragrant
  2. Toast cumin until lightly browned
  3. Grind Sichuan peppercorns, cumin, chili flakes, and black pepper in a spice grinder
  4. Stir in remaining ingredients until mixed well
  5. Store in an airtight container (ex. mason jar)
