Ingredients
- Flour: 120 g (all-purpose)
- Yellow cornmeal: 70 g
- Cornstarch: 28 g
- Baking powder: 1 tsp
- Baking soda: 1/2 tsp
- Salt: 1 tsp
- Black pepper: to taste
- Buttermilk: 2 cups
- Eggs: 2 large
- Butter: 56 g (4 tbsp), melted and cooled slightly
- Extra-sharp cheddar: 84 g, shredded
- Chives: 1/3 cup chopped
Notes
- Serve with fried eggs with runny yolks (over medium or over easy work well)
Instructions
- Stir together flour, cornmeal, cornstarch, baking powder, baking soda, salt, and pepper in a medium bowl
- Whisk together buttermilk and eggs. Pour into bowl with dry ingredients and mix gently but thoroughly. Pour in butter and stir to incorporate. Fold in cheddar and chives
- Cook according to waffle iron directions
