Ingredients

  • Flour: 120 g (all-purpose)
  • Yellow cornmeal: 70 g
  • Cornstarch: 28 g
  • Baking powder: 1 tsp
  • Baking soda: 1/2 tsp
  • Salt: 1 tsp
  • Black pepper: to taste

  • Buttermilk: 2 cups
  • Eggs: 2 large

  • Butter: 56 g (4 tbsp), melted and cooled slightly

  • Extra-sharp cheddar: 84 g, shredded
  • Chives: 1/3 cup chopped

Notes

  • Serve with fried eggs with runny yolks (over medium or over easy work well)

Instructions

  1. Stir together flour, cornmeal, cornstarch, baking powder, baking soda, salt, and pepper in a medium bowl
  2. Whisk together buttermilk and eggs. Pour into bowl with dry ingredients and mix gently but thoroughly. Pour in butter and stir to incorporate. Fold in cheddar and chives
  3. Cook according to waffle iron directions
