Ingredients

Marinade:

  • Soy sauce: 2 tbsp
  • Sesame oil: 4 tsp
  • Cornstarch: 2 tsp
  • Red pepper flakes: 1 tsp

Other:

  • Flank steak: 1.5 lb
  • Eggs: 4
  • Ginger: 2 inch piece
  • Garlic: 2 cloves
  • Carrots: 2
  • Red bell peppers: 2
  • Red chili peppers: 2
  • Vegetable oil: 2 tbsp, divided
  • Basil: 1 small package
  • Soy sauce: 1/4 cup
  • Brown sugar: 4 tsp
  • Rice vinegar: 1 tsp
  • Salt: to taste
  • Pepper: to taste
  • Lime: 1
  • Red pepper flakes: a few pinches
  • Sesame seeds: 4 tsp

Notes

  • Make sure soy sauce is GF if necessary.
  • Can serve with rice noodles or rice.

Instructions

  1. Combine the marinade ingredients
  2. Pat the steak dry with paper towels. Cut into small strips and combine with marinade. Set aside.
  3. Soft boil the eggs (put in boiling water for about 7 minutes 45 seconds if at ~1 mile high. Otherwise, figure it out yourself). Put in ice water when done and set aside.
  4. Mince ginger and garlic and place in bowl.
  5. Cut carrots into matchsticks and cut bell peppers into thin strips. Add to the bowl. Thinly slice chili peppers and add to the bowl.
  6. Preheat a skillet over medium-high heat and add 1 tbsp vegetable oil. Add steak and cook undisturbed for about 3 minutes. Continue cooking, stirring, until cooked to desired doneness. Remove to a plate.
  7. Roughly chop basil leaves and put in a bowl. Add soy sauce, brown sugar, rice vinegar, and 1/4 cup of water. Stir to combine stir fry sauce.
  8. Add remaining 1 tbsp vegetable oil to skillet over medium heat. Add vegetables, salt, and pepper. Cook, stirring occasionally, until tender-crisp. Juice lime into skillet, then add stir-fry sauce and steak. Cook until steak is warm and sauce is thickened.
  9. Peel and halve eggs. Season with a pinch of salt and red pepper flakes.
  10. Divide between bowls and top with sesame seeds.
