Potato Waffles

Description

Dinner waffles made out of potatoes

Ingredients

  • Gold potatoes: 800 g
  • GF flour: 250 g
  • Salt: 1 tbsp
  • Milk: 800 mL
  • Eggs: 6, divided
  • Chopped ham or bacon: as much as desired (optional)
  • Shredded sharp cheddar: 8 oz
  • Scallions: 4, chopped
  • Avocado: to serve, optional, about 1-2

Notes

  • You might need to add more milk depending on which GF flour you use

Instructions

  1. Put potatoes in a large pot, cover with water, and boil until tender. Mash potatoes in a bowl
  2. Add salt, milk, 2 eggs, ham or bacon (if desired), cheddar, and scallions to the bowl with the potatoes. Stir to combine and add more milk as needed until it looks like waffle batter (thick but not too thick)
  3. Cook in a waffle iron according to the directions of your waffle iron
  4. While waffle is cooking, make some fried eggs (over-medium works nicely)
  5. Serve waffle with fried egg on top and sliced avocado if desired
