Passover Apple Cake

Description

Sweet, cinnamony apple cake, perfect for Passover

Ingredients

  • Walnuts: 2/3 cup chopped
  • Cinnamon: 1/4 cup
  • Sugar: 3 cups, divided

  • Apples: 10 small

  • Eggs: 8 large
  • Oil: 1 cup

  • Cake meal: 1.5 cups

Notes

  • Makes two 8“ x 8” pans of cake

Instructions

  1. Preheat oven to 350F
  2. Mix together walnuts, 1 cup of sugar, and cinnamon. Set aside
  3. Peel and slice (not dice) the apples into thin sheets
  4. Beat eggs, oil, and remaining 2 cups of sugar until very light (may take a long time). Add cake meal and mix well
  5. Grease two 8“ x 8” cake pans and pour 1/4 of the batter into each pan. Top with half of apple slices. Sprinkle 1/4 of the walnut mixture. Add remaining batter, top with remaining apples and walnuts
  6. Bake for 1.5 hours. Slice and serve
