Mom's Zucchini Bread

Description

Traditional zucchini bread - Mom's recipe

Ingredients

  • Zucchini: 1 cup coarsely grated
  • Flour: 3 cups
  • Sugar: 2.5 cups
  • Oil: 1.25 cups
  • Eggs: 4, beaten
  • Chopped walnuts: 1.5 cups
  • Vanilla extract: 1.5 tbsp
  • Cinnamon: 1 tbsp
  • Salt: 1.5 tsp
  • Baking soda: 1/2 tbsp
  • Baking powder: 1/2 tsp

Notes

  • 1 large zucchini approximately gives 1 cup when coarsely grated
  • To store: wrap tightly in aluminum foil and freeze

Instructions

  1. Preheat oven to 325F
  2. Grease 8 foil pans (8“ x 4”)
  3. Put all ingredients into large mixing bowl. Mix on low speed for 1 minute, medium speed for 1 minute. Scrape bowl often
  4. Pour into prepared pans. Bake for about 30 minutes, check with toothpick
