Easy weeknight chicken dinner

Ingredients

  • Chicken breasts: 1 lb boneless skinless (about 2 breasts)
  • Vegetable oil: 1/2 tbsp
  • Maple syrup: 2.5 tbsp
  • Soy sauce: 2 tbsp low sodium (sub tamari or GF soy sauce as needed)
  • Minced garlic: 1 tsp
  • Ground turmeric: 1/2 tsp
  • Salt: 1/2 tsp
  • Pepper: 1/2 tsp

Notes

  • Serve with rice or pasta and veggies

Instructions

  1. Preheat oven to 400F
  2. Slice chicken breasts in half and pound to even thickness
  3. Add oil to a cast iron skillet
  4. Pat chicken dry and season with salt and pepper to taste
  5. Add chicken to skillet and sear for a couple of minutes on each side
  6. Combine maple syrup, soy sauce or tamari, garlic, turmeric, salt, and pepper in a small bowl
  7. Once both sides of chicken are seared, pour maple turmeric sauce over chicken and toss to coat
  8. Move skillet from stovetop into preheated oven and bake until chicken is cooked through (about 10 minutes)
