Description
Traditional grated potato latkes for Hanukkah - Mom's recipe
Ingredients
- Potatoes: yukon gold, about 8
- Sweet onion: 1 - 2
- Eggs: 4
- Matzo meal: as needed
- Salt: to taste
- Pepper: to taste
Notes
- Can use sweet potatoes or a combo of sweet potatoes and regular potatoes as well
- I think last time I did this, I used about 3 lbs of yukon golds (unpeeled), 2 sweet onions, and about 8 eggs which made more latkes than anyone ever needs
- Make sure you have enough oil for frying
- You'll probably cry and regret your life at least once while making them
- I've made this with GF matzo meal and they came out great!
Instructions
- Grate potatoes and onions in a food processor in desired amounts (see notes); I usually do a few potatoes, then a piece of onion, then some potatoes, etc.
- Squeeze as much liquid out of the potatoes and onions as possible, then put in a bowl
- Add a few beaten eggs to the potato/onion mixture - enough to moisten it. Then add matzo meal - enough to bind it together. Add salt and pepper to taste
- Put some oil in a frying pan and heat on medium. Form the latkes into very thin patties, then fry on both sides until deep golden brown. Place in a single layer on paper towels to drain some of the oil. You'll have to fry in batches
