Ingredients
- Jasmine rice: 1 cup
- Salt: to taste
- English cucumber: 2
- Ginger: 2 inch piece
- Garlic: 2 cloves
- Soy sauce: 4 tbsp
- Sesame oil: 1 tsp
- Honey: 2 tsp
- Scallions: 1 bunch
- Ground beef: 1.5 lbs (lean)
- Pepper: to taste
- Chili-garlic sauce: to serve
Notes
- Use GF soy sauce if necessary.
Instructions
- Rinse and drain rice. Boil 2 cups of water in a small saucepan and add a little salt. Add rice, stir to combine, cover, and reduce heat to low. Cook for 12 minutes or until rice is done. Set aside.
- Slice the cucumbers lengthwise, then slice into half moons. Set aside.
- Mince ginger and garlic and place into a small bowl. Add soy sauce, sesame oil, and honey.
- Slice scallions into small rounds and set aside.
- Heat skillet over medium-high heat. Add ground beef and pepper. Once mostly cooked, add soy sauce mixture and about 3/4 of the scallions. Stir to combine and continue cooking until fully cooked, about 3-5 minutes.
- To serve, divide rice amongst bowls and top with beef and scallions. Serve with chili-garlic sauce.
