Ingredients
- Salt: to taste
- Pasta: 1 lb, short (fusilli, corkscrew, etc.)
- Vegetable oil: 1-2 tbsp
- Chicken breast: 1 lb, cut into 1 inch pieces
- Cajun seasoning: 3 tbsp, divided
- Baby spinach: 2 cups
- Heavy cream: 3/4 cup
- Parmesan: 1 cup grated
- Scallions: chopped greens for garnish
Notes
- Use GF pasta to make the dish GF
Instructions
- Bring a large pot of water to boil and salt to taste. Add pasta and cook until nearly done. Drain and set aside
- Heat vegetable oil in a large skillet. Toss together chicken and 1 tbsp cajun seasoning and add to skillet. Toss occasionally until cooked through
- Add pasta to a separate pot. Add spinach, heavy cream, and parmesan to pasta. Simmer and stir until pasta absorbs some of the sauce. Add remaining 2 tbsp cajun seasoning to pasta and stir to combine
- Add chicken to pasta and stir to combine
- Serve, garnishing with scallions
