Easy weeknight pasta dish with some spice

Ingredients

  • Salt: to taste
  • Pasta: 1 lb, short (fusilli, corkscrew, etc.)
  • Vegetable oil: 1-2 tbsp
  • Chicken breast: 1 lb, cut into 1 inch pieces
  • Cajun seasoning: 3 tbsp, divided
  • Baby spinach: 2 cups
  • Heavy cream: 3/4 cup
  • Parmesan: 1 cup grated
  • Scallions: chopped greens for garnish

Notes

  • Use GF pasta to make the dish GF

Instructions

  1. Bring a large pot of water to boil and salt to taste. Add pasta and cook until nearly done. Drain and set aside
  2. Heat vegetable oil in a large skillet. Toss together chicken and 1 tbsp cajun seasoning and add to skillet. Toss occasionally until cooked through
  3. Add pasta to a separate pot. Add spinach, heavy cream, and parmesan to pasta. Simmer and stir until pasta absorbs some of the sauce. Add remaining 2 tbsp cajun seasoning to pasta and stir to combine
  4. Add chicken to pasta and stir to combine
  5. Serve, garnishing with scallions
