Super easy cheesy broccoli side dish

Ingredients
- Broccoli: 1 head
- Olive oil: 1 tbsp
- Salt, Pepper: to taste
- Cheddar: 4 oz
- Red pepper flakes: 1/2 tsp (optional)
- Lemon juice (optional)
Instructions
- Cut broccoli into large wedges after separating the crown from the stalk; trim and peel the stem and cut into large disks
- Heat cast iron pan over medium-high and drizzle in oil. Add broccoli, season with salt and pepper, and arrange so flat sides make contact with pan
- Cut cheddar into 1/2 inch pieces
- When broccoli has a nice dark brown sear on one side, sprinkle the cheddar over the broccoli. Keep cooking for a minute or two
- Put onto plates and add red pepper flakes and/or a squeeze of lemon juice if desired
