Ingredients
- Olive oil: 1 tsp
- Onion: 1, chopped
- Garlic: 2 cloves, minced
- White rice: 3/4 cup uncooked
- Low-sodium vegetable broth: 1.5 cups
- Canned black beans: 3.5 cups, drained
- Cumin: 1 tsp ground
- Cayenne pepper: 1/4 tsp
Instructions
- Heat oil in a saucepan over medium-high heat. Add onion and cook until softened, about 10-15 minutes. Add garlic and garlic; cook and stir
- Stir in rice to coat; cook and stir for 2 minutes
- Add vegetable broth and bring to a boil. Cover, reduce to a simmer, and cook until liquid is absorbed, about 20 minutes
- Stir in beans, cumin, and cayenne; cook until beans are warmed through
