Side dish that complements Mexican / Latin American dinners well

Ingredients

  • Olive oil: 1 tsp
  • Onion: 1, chopped
  • Garlic: 2 cloves, minced
  • White rice: 3/4 cup uncooked
  • Low-sodium vegetable broth: 1.5 cups
  • Canned black beans: 3.5 cups, drained
  • Cumin: 1 tsp ground
  • Cayenne pepper: 1/4 tsp

Instructions

  1. Heat oil in a saucepan over medium-high heat. Add onion and cook until softened, about 10-15 minutes. Add garlic and garlic; cook and stir
  2. Stir in rice to coat; cook and stir for 2 minutes
  3. Add vegetable broth and bring to a boil. Cover, reduce to a simmer, and cook until liquid is absorbed, about 20 minutes
  4. Stir in beans, cumin, and cayenne; cook until beans are warmed through
