Heat olive oil in a large skillet over medium-high heat
Season the chicken with salt and pepper, then add to the skillet and brown on one side, about 3 - 4 minutes (don't touch it during this time to let it get a nice brown color)
Make the glaze while the chicken is cooking - whisk together the honey, soy sauce, garlic, and red pepper flakes in a small bowl until well combined
Add the sauce to the pan and toss to coat the chicken. Cook until chicken is cooked through, about 4 - 5 more minutes
Serve with rice and a vegetable; top with scallions and sesame seeds if desired
