Creamy Cajun Chicken Pasta

Easy weeknight pasta dish with some spice

Ingredients
Baby spinach: 2 cups
Heavy cream: 3/4 cup
Parmesan: 1 cup grated

Instructions
Bring a large pot of water to boil and salt to taste. Add pasta and cook until nearly done. Drain and set aside
Heat vegetable oil in a large skillet. Toss together chicken and 1 tbsp cajun seasoning and add to skillet. Toss occasionally until cooked through
Add pasta to a separate pot. Add spinach, heavy cream, and parmesan to pasta. Simmer and stir until pasta absorbs some of the sauce. Add remaining 2 tbsp cajun seasoning to pasta and stir to combine
Add chicken to pasta and stir to combine
Serve, garnishing with scallions
