Cajun Chicken with Spaghetti Squash

Description

Spicy and creamy chicken and spaghetti squash dish, perfect for a keto/carb-free diet

Ingredients

  1. Heat oven to 425F then put in entire spaghetti squash (uncut) for about 25-40 minutes until you can smell it and it's getting golden brown (turn after 15 minutes)
  2. Remove squash from oven and carefully cut in half. Remove seeds, then spaghettify the squash into a bowl and set aside
  3. Thinly slice chicken breasts and cover in cajun seasoning on both sides
  4. Heat oil in skillet over medium heat. Add chicken to pan and cook through (in batches, if necessary)
  5. While chicken is cooking, heat up the cream, butter, garlic salt, 1 tbsp cajun seasoning, and 1/2 tsp cayenne pepper. When it begins to boil, add spaghetti squash and reduce to simmer over medium low. Simmer for 20 minutes
  6. Cut chicken into strips and add to squash. Stir. Add more cajun seasoning to taste
