  1. Cut broccoli into large wedges after separating the crown from the stalk; trim and peel the stem and cut into large disks
  2. Heat cast iron pan over medium-high and drizzle in oil. Add broccoli, season with salt and pepper, and arrange so flat sides make contact with pan
  3. Cut cheddar into 1/2 inch pieces
  4. When broccoli has a nice dark brown sear on one side, sprinkle the cheddar over the broccoli. Keep cooking for a minute or two
  5. Put onto plates and add red pepper flakes and/or a squeeze of lemon juice if desired
