====== Turmeric-Lime Chicken with Pumpkin Seed Salsa ====== Tags: [[dinner]] - [[chicken]] - [[Gluten Free]] - [[GF Dinner]] - [[GF Chicken]] \\ Active Time: 30 minutes\\ Passive Time: ~28 hours (~4 hours + overnight)\\ Serves: 4\\ ====Description==== Flavorful, moist chicken with a slightly spicy salsa to serve with it ====Source==== [[https://www.bonappetit.com/recipe/turmeric-lime-chicken-with-pumpkin-seed-salsa|Bon Appetit]] ====Ingredients==== *Whole chicken: 1 (3.5 - 4 lbs, ideally) *Plain, whole milk yogurt: 1 cup *Finely grated lime zest: 2 tsp *Honey: 1 tsbp *Cumin: 1.5 tbsp ground *Turmeric: 1/2 tsp ground *Olive oil: 3 tbsp + extra *Lime juice: 6 tbsp, divided *Onion: 1, coarsely chopped *Poblanos: 2, coarsely chopped *Pumpkin seeds (pepitas): 1/2 cup raw shelled *Cilantro: 1/2 cup leaves with tender stems *Avocado: 1, optional ====Instructions==== -Spatchcock the chicken, then use about 1-1.5 tbsp kosher salt to rub all over the skin and under the skin on the breasts. Place the tray with the chicken in the fridge and leave overnight to dry out (for optimally crispy skin) -Whisk yogurt, lime zest, honey, ground cumin, ground turmeric, 3 tbsp olive oil, 3 tbsp lime juice, and 1 - 1.5 tsp kosher salt in a small bowl. Cover chicken with this mixture, including both on top of and under the skin. Put the chicken back in the fridge for at least 2 hours (and up to 12 hours) -Place a rack in middle of oven; preheat to 375F. Place onion and poblanos in a medium bowl; drizzle with oil and season with salt. Toss to coat, then put on a tray -Place onion and poblano tray and chicken tray in the oven. After 25 minutes, scatter the pumpkin seeds on top of the onion and poblano, and continue cooking for another 15 minutes. Remove the poblano/onion tray and continue cooking chicken until it reaches an internal temperature of 165F -In the meantime, place half the onion, both poblanos, and all of the pumpkin seeds into a food processor. Add remaining 3 tbsp of lime juice as well as the cilantro and avocado, if using. Process until smooth. Taste and add salt and pepper as desired, as well as more onion if desired. -Carve chicken and serve with salsa and lime wedges \\ \\
