Easy, ugly, delicious pistachio cookies


====Ingredients====
  *Egg whites: 3

  *Sugar: 1 cup

  *Pistachios: 1 lb, peeled, unsalted, crushed (but not too finely)

====Notes====
  *Freezes well for storage


====Instructions====
  -Beat egg whites until foamy. Very slowly add sugar until well mixed. Add pistachios and refrigerate for 1 hour
  -Preheat oven to 350F
  -Drop by teaspoonful onto cookie sheet (about 45 cookies)
  -Bake for 12-15 minutes, until lightly browned. Remove and cool completely
