Make a well in the flour and add all other ingredients. Using a fork, beat the eggs together with the olive oil, water, and salt. Begin to incorporate the flour into this well -Make the mixture homogenous by carefully continuing to mix in the flour, then begin kneading. Knead for about 10 - 15 minutes, until the dough is very smooth and almost velvety. Add more water as needed -Wrap the dough in plastic wrap and let rest for at least one hour; if you plan to let it rest for more than this, put it in the refrigerator -Roll and cut the pasta as desired \\ \\
