Boil 2 cups of water in a small saucepan and add a little salt. Add rice, stir to combine, cover, and reduce heat to low. Cook for 12 minutes or until rice is done. Set aside. -Slice the cucumbers lengthwise, then slice into half moons. Set aside. -Mince ginger and garlic and place into a small bowl. Add soy sauce, sesame oil, and honey. -Slice scallions into small rounds and set aside. -Heat skillet over medium-high heat. Add ground beef and pepper. Once mostly cooked, add soy sauce mixture and about 3/4 of the scallions. Stir to combine and continue cooking until fully cooked, about 3-5 minutes. -To serve, divide rice amongst bowls and top with beef and scallions. Serve with chili-garlic sauce. \\ \\
