Easy pasta dough that rolls out beautifully

====Ingredients====
  *Flour: 1 lb (all purpose) \\ \\ 
  *Eggs: 4
  *Egg yolks: 1
  *Olive oil: 1/4 cup
  *Kosher salt: to taste
  *Water: 1 - 3 tablespoons

====Notes====
  *I haven't tried this in a Kitchenaid, but I imagine it would work fine
  *I used about 1 tsp Morton kosher salt

====Instructions====
  -Put the flour in a large bowl. Make a well in the flour and add all other ingredients. Using a fork, beat the eggs together with the olive oil, water, and salt. Begin to incorporate the flour into this well
  -Make the mixture homogenous by carefully continuing to mix in the flour, then begin kneading. Knead for about 10 - 15 minutes, until the dough is very smooth and almost velvety. Add more water as needed 
  -Wrap the dough in plastic wrap and let rest for at least one hour; if you plan to let it rest for more than this, put it in the refrigerator
  -Roll and cut the pasta as desired
