Super easy cheesy broccoli side dish

====Ingredients====
  *Broccoli: 1 head

  *Olive oil: 1 tbsp

  *Salt, Pepper: to taste

  *Cheddar: 4 oz

  *Red pepper flakes: 1/2 tsp (optional)
  *Lemon juice (optional)


====Instructions====
  -Cut broccoli into large wedges after separating the crown from the stalk; trim and peel the stem and cut into large disks
  -Heat cast iron pan over medium-high and drizzle in oil. Add broccoli, season with salt and pepper, and arrange so flat sides make contact with pan
  -Cut cheddar into 1/2 inch pieces
  -When broccoli has a nice dark brown sear on one side, sprinkle the cheddar over the broccoli. Keep cooking for a minute or two
  -Put onto plates and add red pepper flakes and/or a squeeze of lemon juice if desired
